There are actually THREE difficulty levels for that challenge. After getting the second Shine Sprite, the game stacks the crates differently again, but you can only earn a blue (collected) Shine at this point. The crates are stacked so that there is a pile FOUR crates high, which makes it harder than the challenge given to earn the second Shine Sprite - it becomes almost necessary to use a smaller pile to get on top of the large pile without wasting loads of time using FLUDD's hover nozzle after a sideflip or something.
