Not to be confused with Fishbone, Jean de Fillet is a skeleton fish that lives in both water and lava. It only appears in two levels of Super Mario World 2: Yoshi's Island. The undead fish is at the very end of Tap-Tap the Red Noses fortress, and underwater in World 4's Extra level, The Impossible Maze.

Jean de Fillets stick they're heads out of the water, then jump out. They can be defeated with a well timed egg.
