It appears in two levels of Super Mario World 2: Yoshi's Island and Yoshi's Island: Super Mario Advance 3, as well as Yoshi's New Island. This undead fish is at the very end of Tap-Tap the Red Nose's fortress and underwater in World 4's extra level, The Impossible? Maze. In the GBA version, they are given another appearance; World 6's secret level, Endless World of Yoshis.
Jean de Fillets stick their heads out of the water or lava, then jump out. They can be defeated with a well timed egg.
