The only other main series Mario Kart game where we have character descriptions at all is Mario Kart DS, the rest of them just have galleries with extra relevant information like their weight class. The alternate criteria is to play 4,950 races (too much for me, good thing she is unlocked from the start in MK8DX) OR play 50 races with a SMG save file. 50 is much more manageable, but on this talk page there's an implication that she can be unlocked with just a SMG save file.
