:I don't know about how to view SPP sprites, but you may be able to see which files are loaded for certain enemies by using Desmume's logging feature (Config>Slot 1>Retail DEBUG and then look at the CMD window). For Mario Odyssey, use Switch Toolbox for the archives/models/bymls.
